Eating Well Cowboy Beef and Bean Chili

I have been making this recipe regularly for 6 years! It's easy, delicious and healthy. I add a large diced zucchini to add some nutrition and volume - I love zucchini but even if you don't, you can't taste it in this. I often use the mixture for tacos or as a dip with nacho chips.

I'm not very experienced in the kitchen but this was easy to follow and quick to make with an outstanding result. I'm probably my toughest critic when it comes to testing the results of my dishes, and I have to say I love, love love this dish. The salsa is the key, if you purchase a good brand that you've tried before you will have success. The only change I made was the cheese, I had old cheddar on hand so I used that and it was stellar.

Delicious! Hearty and flavorful without being too heavy. Quick enough for a weeknight. This was a nice chili variation in that wasn't so tomato-y. I made a vegan version with Beyond Beef Crumbles. Aside from that, followed the recipe exactly. Put some avocado slices on top.

Has Some Kick! We made this chili yesterday for the football game. It was yummy. I added tomato paste and threw the whole chili into a crockpot. I used hot green salsa and added a bit more chili power. It had just enough umpth to it. I served it with cheese on top. What a great way to start the week. Pros: It has just enough umpth to it. Cons: Not enough beef!

Tasty! I don't think I've ever made a beef chili with enchilada sauce or salsa. I used both btw as I happened to have half a jar of each opened from other recipes. I used a yellow bell instead of a red and topped off the bowls with a mix of onion, jalapeno, cilantro and lime. Everyone devoured it!

delicious Surprisingly easy to make. And tastes very good. Let it set a day (if you can wait) to let the flavors grow stronger. The key is finding the right green salsa for your taste levels, but that's easy enough to play around with Pros: easy, tasty Cons: none

Not really a chili verde, but quick and easy!This recipe came together so fast and was so easy to prepare. Stupendous ! Followed the recipe exactly except added a half a cup of Bush's black beans with the full can of Pinto Beans. OMG ! Better double the recipe because after your family tastes this there will not be enough. 5 stars ! Pros: Easy and very flavorable Cons: None

Our go-to recipe, easy and delicious!My husband and I love this recipe, we top it with a little reduced fat Mexican cheese and avocado, and add ghost pepper salsa for extra heat. It's so fast and easy, is perfect for a weeknight dinner, and is tasty left over as well.

Green salsa made for a nice change from traditional chilli. Used 2 cans of kidney beans and added small can of organic tomato paste to thicken. (great idea shared by another member). Topped with a dollop of low-fat sour cream and shredded Monterey. Served with whole wheat saltine crackers Pros: Simple ingredients, quick & easy to make, can feed a few or many :-) Cons: There were NO leftovers for tomorrow's lunch!

The perfect quick meal I made this after coming home for a long day of errands. I was able to feed the very hungry family within 30 minutes, start to finish. It was wonderful. I served it over rice with fresh cilantro and queso fresco cheese. It was a filling meal for sure. Will be making this again. Pros: Quick and Easy

Way too spicy....... I made this halving all of the spicy ingredients. I love the spice as does my husband, but not kids not so much. It was the spiciest chile I have ever eaten! I have a recipe for chile that I make and it is no slouch, but this was so spicy, I almost couldn't eat it. It was very plain tasting, not enough flavors and not enough beans. Pros: Smells amazing, contains ground beef, quick prep. time. Cons: Way too spicy, not enough flavors, not saucy like a red sauce chile.

excellant LOVED IT!!! Ive never made chili before cause lets face it, no one can make chili like my dad but i am SO GLAD i did. It is fantastic, quick and simple. I did put extra lime juice and added ciltranto to it plus used Rotel instead of verde sauce but still awesome. However it was a little spicy for my kids so i might reduce the amount of heat next time.

Best Chile EVER!! I'm very particular about chili. I live in the south so most chilis here are spicy and I don't like spicy. My husband is a HUGE chili fan and I wanted to find a healthy recipe for chili because we are both trying to eat heathier. This recipe was FANTASTIC!! It wasn't HOT and it wasn't "blah". I made one small change by adding an extra can of beans. (I used one can pinto and one can kidney.) Before I served it, I lightly spinkled some shreaded cheese on top. I'm still new to cooking so whenever I make something I'll put some off to the side to bring to my mother. She raved about it, even bringing some over to my grandparents, who also loved it. My husband said it was the best chili he'd ever eaten and I completely agree.

Awesome! This was really great. But I added scallions, crushed red pepper, a little but of garlic powder/salt, cilantro, tomatoes, and a small can of regular salsa. Turned out great.

Great jiffy chili! This was a very easy weeknight meal, just as tasty as a chili simmered for hours. I used 2 lb ground beef and 2 cans beans and kept other ingredients in the stated quantities. Luckily I tasted the salsa verde before adding it as it was very hot. Ended up using half the jar and half a jar of mild red salsa. Added a bit of additional water to achieve the consistency I was looking for. With grated cheddar, chopped green onions, light sour cream, and a side dish of raw veg, dinner was on the table in a jiffy. Pros: Quick, tasty, features household ingredients Cons: Salsa verde varies in heat

DeliciousIt was fantastic!! While cooking the beef, onions, and bell pepper, I added about 2 tbsp of Worcestershire sauce to make it more flavorful. Smelled and tasted great. I also added a small can (4 tbsp) of tomato paste, and about 2 tbsp of chile-garlic sauce to the recipe. Everyone loved it.Pros: I never had salsa verde before, but it was very good.

yum!i made this last night for the first time and it was soo delicious! I replaced the ground beef with ground chicken and used a fresh red salsa as i couldn't get salsa verde at my grocery store, but it was still amazing!

Great simple chili!I love spice and in the future would use some hot peppers and hot salsa... but otherwise, this recipe is great! No hassle and just delicious! I looked forward every day to eating the leftovers :)Pros: easy, delicious, fastCons: could be spicier

Fabulous and fast! I have an authentic from-scratch Chile Verde recipe that simply can't be beat, but for a quick weeknight meal, this was fabulous in my tummy! My husband and I both really enjoyed it. I always follow recipes exactly as they're written the first time I make them, and this one gets 5 true stars...as is! Pros: Easy and quick to prepare Cons: Flavors aren't as rich as they would be from scratch

Not bad...it was pretty spicy, but that was the goal. I added some cilantro into the mix and ate it with flour tortillas. Best thing is I have enough for the rest of the week! I will probably make this again sometime.

Very thick and filling. I felt that one can of beans left the chili rather sparse (I'm a big bean fan), so I put in two cans of beans. I tried it both as plain chili, and wrapped in whole grain soft shell tortillas. I personally prefer it served in tortillas. Very delicious!!

This makes quite a bit...I thought for sure I would have left overs...NOPE! Everyone ate it up even my dad who usually doesn't like spicy food...the flavor is delicious and its very simple to make...my new favorite!

Very good recipe. Used ground turkey and added a can of black beans and a can of diced tomatoes. Everyone loved it!
